
Candied Yams
6 Medium Yams
3 Cups Sugar
1-1/2 teas. Watkins Cinnamon
1/2 teas. Watkins Ground Cloves
1/2 teas. Watkins Nutmeg
4 Tbsp. Butter
6 Cups Boiling Water
Wash the yams (sweet potatoes) and bring to a boil in
enough water to cover. Boil 5 minutes; drain, cool, peel and slice in half lengthwise.
Place slices in heavy 4-qt. saucepan. Add sugar, spices, butter and boiling water. Cook
uncovered for 1-1/2 hours until syrup has thickened and almost cooked away. Turn yams
occasionally during the last half of the cooking but do not stir. Serves six.
