
Watkins Pumpkin Spread
2 cups canned pumpkin
2 tsp. Watkins Pumpkin Pie Spice
1 Tbsp. fresh lemon juice
3 1/2 cups sugar
1/2 cup brown sugar
3/4 cup water
1 box Sure Jell Fruit Pectin
Rinse clean 1/2 pint plastic containers and lids with
boiling water. Dry thoroughly
Mix pumpkin and Watkins
Pumpkin Pie Spice in a large bowl; add lemon juice. Stir in sugars and let
mixture stand for 10 minutes, stirring occasionally. Mix water & pectin in a small
pan. Bring to boil on high heat stirring constantly. Boil 1 minute. Stir pectin mixture
into pumpkin, stirring constantly until sugar is completely dissolved - approximately 3
minutes.
Fill containers to within 1/2 inch of rims. Wipe off
edges and cover with lids. Let stand at room temperature 24 hours. Store in refrigerator 3
weeks or freeze for up to 1 year.
