Watkins Fruited Curry Chops

6 very lean Pork Chops cut 3/4" thick
1 Tbsp. Watkins Original Grapeseed Oil
2 cups apple juice, divided
2-3 tsp. Watkins Curry Powder
2 tsp. Watkins Chicken Soup Base
1/8 tsp. Watkins Garlic Flakes
1/8 tsp. Watkins Lemon Pepper
1 cup chopped onion
1 medium green pepper, cut in strips
1/2 cup chopped mixed dried fruit (3 oz)
1 1/2 cups ready to cook couscous, or pre-cooked, quick rice (brown or white)
2 tsp Watkins Parsley
1/2 tsp. Watkins Lemon Peel
2 Tbsp. Watkins Vanilla Dessert Mix
1 Tbsp. Watkins Coconut Dessert Mix
3 Tbsp. cold water

Trim fat from chops. Brush grapeseed oil over cooking surface of a large skillet. Brown chops slowly on both sides; remove and set aside. Add 1/2 cup apple juice, Watkins Curry Powder, Watkins Chicken Soup Base, Watkins Garlic Flakes and Watkins Lemon Pepper; cook over medium heat for 5 minutes, scraping bottom to blend in browned solids. Return chops to skillet; add remaining apple juice and onion then pork chops. Simmer covered for 20 minutes; add green pepper and dried fruits. Simmer about 10 minutes more or until meat and vegetables are tender. Meanwhile, prepare couscous or rice according to package directions, except omit salt. Stir Watkins Parsley and Watkins Lemon Peel into cooked couscous or rice; spoon onto large serving platter. Top with chops; keep warm. Combine Watkins Vanilla and Coconut Dessert Mixes and water; stir into fruit mixture. Cook and stir until bubbly and thickened; cook and stir 2 minutes more. Spoon over chops.
