
Turkey Salad for Two
2 Cups Tightly Packed Torn Lettuce
1 Cup Chopped Cooked Turkey Breast
1/2 Cup Unsweetened Mandarin Orange Segments
1/3 Cup Seedless Green Grapes, halved
1/3 Cup Seedless Red Grapes, halved
1/2 Cup Diagonally Sliced Celery
Creamy Curry Dressing
4 Leaves Red Cabbage
Celery Leaves (optional)
Orange Rind Curls (optional)
Combine first 6 ingredients in a medium bowl; toss
gently. Spoon Creamy Curry Dressing evenly over lettuce mixture, and toss gently. Spoon
evenly onto individual serving plates lined with red leaf lettuce. If desired, garnish
with celery leaves and orange rind curls. Makes 2 2 1/4 cup servings.
Creamy Curry Dressing:
1/4 Cup Light Mayonnaise
2 Tbsp. Skim Milk
1 teas. Watkins Cracked Black Pepper
1/2 teas. Watkins Curry Powder
1/4 teas. Watkins Tarragon
Combine all ingredients in a small bowl, stirring well.
Makes 1/4 cup plus 2 Tablespoons.
