
Spinach & Fresh Fruit Salad with
Honey-Lime Dressing
Spinach is a rich source of iron and vitamins A and C.
Paired with grapes and citrus fruits, it makes a truly nutritious--and--delicious salad!
1/2 Cup / 125 ml Plain Nonfat Yogurt
3 Tbsp. / 45 ml Honey
1 teas. / 5 ml Lime Extract
1/8 teas. / 0.6 ml Watkins Ginger
2 Cups / 500 ml Torn Spinach Leaves
2 Cups / 500 ml Torn Boston Lettuce
1 Large Grapefruit, peeled and sectioned
1 Medium Orange, peeled and sectioned
1/2 Cup / 125 ml Seedless Purple or Red Grapes, halved
1 Small Purple Onion, sliced and separated into rings
Combine yogurt, honey, lime extract and ginger in small
bowl; chill thoroughly. In large bowl, combine spinach, lettuce, fruit and onions. Just
prior to serving, add dressing and toss gently. (Makes 8 servings)
