
Filet of Sole with Mushroom-Garlic Sauce
1 Pound Fresh or Frozen (thawed) Sole or Flounder Fillets
1 Cup Water
3 Medium Carrots, cut into julienne strips
3/4 teas. Watkins Seasoning Salt
1/4 to 1/2 teas. Watkins Pepper
1 teas. Watkins Garlic & Dill Snack N Dip Mix
1 Package (6 oz.) Frozen Pea Pods
1/4 Cup Margarine or Butter
1 Tbsp. Lemon Juice
2 teas. Watkins Garlic & Dill Snack N Dip Mix
1 Jar ( 4 1/2 oz.) Sliced Mushrooms
Starting at narrow end, roll up each fillet; set aside.
In 8-inch square microwave-safe dish, combine water, carrots, Seasoning Salt, and 1/4
teas. Pepper. Cover with plastic wrap and microwave (HIGH) 5 to 7 minutes, or until
carrots are tender; remove. Microwave pea pods per package directions; place on serving
platter and set aside. Arrange fish seam side down over carrots. Sprinkle with 1 teaspoon
Garlic & Dill Snack N Dip Mix and a dash of Pepper. Cover with plastic wrap and
microwave (HIGH) 5 to 7 minutes, or until fish flakes easily with fork. Lift fish and
carrots out of liquid and place atop pea pods; keep warm. In small bowl, microwave
margarine (HIGH) 45 seconds, or until melted. Add remaining ingredients and microwave
(HIGH) 30 seconds, or until heated. Serve over fish and vegetables. Makes 4 servings
