
Red Bean & Rice Salad
1 package red beans and rice (use
Watkins Chicken
Soup Base in Water)
While rice and beans are cooking, chop or dice up any
combination of vegetables:
2 Fresh Tomatoes
2 Stalks of Celery
Broccoli Flowerett
1 Green Pepper
1/2 Cucumber or Zucchini
Sliced Fresh Mushrooms
1 Medium Onion
1 Carrot Sliced Very Thin
1/4 Cup
Watkins Original
Grapeseed Oil
1 teas. Watkins Italian Salad Seasoning
1 Tbsp. Vinegar
Place cooled rice and beans in mixing bowl. Add
vegetables, oil, salad seasoning and vinegar. Toss, and chill for several hours
before serving. When serving top with salsa. For main dish,
add 2 cups of cooked meat. . chicken, beef or pepperoni.
