
Pumpkin Chocolate Chip Muffins II
3/4 Cup Sugar
1/4 Cup Applesauce
4 Egg Whites
3/4 Cup Canned Pumpkin
1/4 Cup Buttermilk
1 Cup All-Purpose Flour
1/2 Cup Wheat Flour
3/4 teas. Watkins
Baking Powder
1/2 teas. Baking Soda
1 teas. Watkins
Pumpkin Pie Spice
1/4 teas. Salt
1/2 Cup Mini Chocolate Chips
Mix sugar, applesauce, and egg whites. Add pumpkin and
buttermilk. In a separate bowl, mix together flours, baking powder, baking soda, pumpkin
pie spice and salt. Add to pumpkin mixture and mix well. Fold in chocolate chips. Spoon in
12 muffin cups which have been sprayed with Watkins Cooking Spray. Bake in 400 degree oven for
20-25 minutes.
Per muffin: 137 calories, 3 grams
of fat, 1.5 grams of fiber
