One Egg Spice Cake

1 1/2 Cups Sifted All-Purpose Flour
3/4 teas. Salt
2 teas. Watkins Baking Powder
1/3 Cup Shortening
1/2 teas. Watkins Ginger
1/2 teas. Watkins Cinnamon
1/2 teas. Watkins Allspice
1 Cup Sugar
1 Large Egg
3/4 Cup Milk

Broiled coconut topping:
3 Tbsp. Melted Butter or Margarine
1/3 Cup Light Brown Sugar
2 Tbsp. Evaporated Milk or Light Cream
1/4 teas. Watkins Coconut Extract
1/4 teas. Watkins Nutmeg
1/2 Cup Shredded Coconut

Preheat oven to 350 degrees. Sift together flour, salt and baking powder and set aside. Mix shortening with spices. Gradually blend in sugar. Beat in egg. Add flour mixture alternately with milk. Beat batter for 30 seconds. Turn batter into a well-greased, lightly floured 9-by-9-by-2-inch pan. Bake for 35 minutes or until a toothpick inserted in center comes out clean. Spread cake, while hot, with broiled coconut topping.

To make topping: Combine ingredients and spread over hot cake. Place under broiler until topping is bubbly and brown (about 5 minutes), watching closely that it doesn't burn.  Serves 12.
