
Mexicorn & Black Bean Slaw
1/4 Cup / 60 mL Red Wine Vinegar
2-1/2 Tbsp. / 40 mL Watkins Citrus Cilantro Grapeseed Oil
4 teas. / 20 mL Watkins Chili Powder
1 Tbsp. /15 mL Sugar
1-1/4 teas. / 6 mL Watkins Garlic Salt
1/4 teas. / 1.2 mL Watkins Cilantro
1/8 to 1/4 teas. / 0.6 mL to 1.2 mL
Watkins Cajun Pepper
1 Can (16 oz. / 454 g) Black Beans, drained and rinsed
1 Can (11 oz. / 312 g) Corn with Red and Green Peppers, drained
1-1/2 Cups / 375 mL Coarsely Shredded Cabbage
1/2 Cup / 125 mL Chopped Celery
1/4 Cup / 60 mL Chopped Green Onion
1 Jar (2 oz. / 57g) Diced Pimento, drained
Whisk together the first seven ingredients in a large
bowl. Add remaining ingredients and toss to coat. Refrigerate at least 2 hours to allow
flavors to develop. Makes 8 servings.
