Low-Fat Strawberry-Banana Shortcake

2 Cups / 500 ml Fresh or Frozen Sliced Strawberries
3 Tbsp. / 45 ml Sugar, preferably superfine
1/4 teas. / 1.2 ml Watkins Banana Extract
2-1/4 Cups / 550 ml All-Purpose White Flour
1/3 Cup / 80 ml Sugar plus 1 Tbsp. / 15 ml for sprinkling over biscuits
1-1/2 teas. / 7.5 ml Watkins Baking Powder
3/4 teas. / 4 ml Baking Soda
1/4 teas. / 1.2 ml Salt
2 Tbsp. / 30 ml Cold Unsalted Butter, cut into small pieces
3/4 to 1 Cup / 180 to 250 ml Low-Fat Buttermilk
1 Tbsp. / 15 ml Watkins Original Grapeseed Oil
2 teas. / 10 ml Watkins Vanilla, Original Double-Strength
2 Bananas, sliced
1-1/2 Cups Frozen Non-Fat Vanilla Yogurt
Watkins Cooking Spray

Preheat oven to 425ºF / 220ºC. Combine strawberries, sugar, and Banana Extract in medium bowl; toss, then set aside. Coat a baking sheet with Watkins Cooking Spray; set aside. In mixing bowl, combine flour, 1/3 Cup / 80 ml sugar, baking powder, baking soda, and salt. Cut in butter until mixture is crumbly. In small bowl, combine buttermilk, oil, and Watkins Vanilla; mix well. Make a well in center of flour mixture and add the buttermilk mixture. With a fork, stir just until combined, adding additional buttermilk as necessary, to form a slightly sticky dough; do not overmix. Place dough on a lightly floured surface and sprinkle with a little flour. Gently pat with fingertips to an even 3/4-inch / 2-cm thickness. Cut into biscuits with a 3-inch / 8-cm round cookie cutter. Transfer biscuits to baking sheet. Gather scraps together and cut out remaining biscuits. You should have 6 biscuits. Brush lightly with milk and sprinkle with remaining sugar. Bake for 13 to 15 minutes or until golden. Cool slightly, then split in half with a serrated knife. Place bottom halves on dessert plates; top with some of the berry mixture and sliced bananas. Top with top halves, additional berries and yogurt. Makes 6 servings.
