
Low-Fat Blueberry Muffins
½ Cup Nonfat Plain Yogurt
2 Tbsp. Water
½ Cup Brown Sugar
2 Tbsp. Soy Flour
1 teas. Watkins
Cinnamon
4 teas. Watkins
Baking Powder
½ Cup Oat Bran (or oatmeal)
1 Cup Blueberries
1 Cup Flour
½ Cup White Wheat Flour*
½ Cup Wheat Flour
1 Cup Milk
Combine yogurt, water, sugar, soy flour, cinnamon, baking
powder, and oat bran. Mix in blueberries. Alternately add flour and milk. Stir until all
ingredients are moistened. Divide among 12 greased muffin tins. Bake at 400° for 25
minutes. *White Wheat Flour is a "lighter" whole wheat flour from King Arthur.
If you can't find it, just use all-purpose flour instead. Your muffins won't have as much
fiber.
