Chocolate Éclair Dessert

1 Recipe of Watkins Chocolate Dessert Mix
1 Container of Whipped Topping
42 Graham Crackers
1 Jar of Fat-Free Fudge Topping
1 teas. Watkins Vanilla, Double Strength
1 teas. Watkins Almond

Make up one recipe of Watkins Chocolate Dessert Mix following directions on the can.  Cool.  Fold in whipped topping and vanilla.  Place a layer of graham crackers in bottom of 9 x 13 pan.  Spoon 1/2 of pudding mixture on top of the crackers.  Repeat with another layer of graham crackers and pudding.  Top with remaining crackers.  Spread with fudge topping.  Optional-melt 1 ounce of white baking chocolate and stir in almond extract and drizzle over fudge topping.  Cover & chill overnight.  Cut into 2 inch squares.

To make the recipe fat-free use skim milk, fat-free whipped topping and fat-free graham crackers.
