
Cottage Cheese Rolls

2 1/2 Cups Flour
1/4 Cup Sugar
1 teas. Salt
1 Package Dry Yeast
1/4 Cup Warm Water
1 Stick Margarine or Butter
1 Cup Cottage Cheese
1 Egg
Dissolve the yeast in warm water. Sift together dry
ingredients. Cut butter into dry ingredients until forms "peas". Add cottage
cheese and mix. Add egg to yeast and mix. Fold in yeast mixture and mix until dough leaves
sides of bowl and forms a ball. Roll out on a lightly floured board to 1/4 inch. Spread
with filling:
Filling:
3/4 Cup Light Brown Sugar
3 Tbsp. Butter
Pinch Salt
1/2 teas. Watkins Vanilla,
Original Double Strength
1/2 teas. Watkins
Almond Extract
Melt butter and add other ingredients. After filling is
spread onto dough, sprinkle 1/2 cup chopped nuts over filling. Roll dough, starting at the
long side (like a jelly roll). After rolled up, cut slices 1 1/2 inch (should make 12 to
15). Let Rise 35 - 40 minutes. Bake 400 degrees for 15 minutes. When cool, glaze with
powdered sugar and milk glaze.
