
Coconut Bread
2 1/2 Cups All Purpose Flour
1 Tbsp. Watkins
Baking Powder
1 1/2 teas. Watkins
Cinnamon
1/2 teas. Watkins
Nutmeg
1/2 teas. Salt
2 Cups Shredded Sweetened Coconut
1/4 Cup Sugar
3 Large Eggs
1/3 Cups Milk
1 teas. Watkins Vanilla, Double Strength
1/2 Cup (1 stick) Unsalted Butter---melted & cooled
1 teas. Watkins
Coconut Extract
Heat oven to 350 degrees. Butter a 9 x 5 inch loaf pan.
Sift flour, baking powder, cinnamon, nutmeg and salt into large bowl. Stir in coconut and
sugar. Beat eggs, milk, Watkins Vanilla,
butter and coconut extract in medium bowl until blended; stir into flour mixture. Spoon
into prepared pan. Bake until pick inserted in center comes out clean, about 1 hour. Cool
in pan on wire rack 5 minutes, then turn out onto rack and let cool completely. Servings:
