Caribbean Rice & Red Beans

1 Package Watkins Rice & Red Bean Blend
2 Tbsp. / 30 mL Watkins Citrus Cilantro Grapeseed Oil
1/2 Onion, finely chopped
1/2 Green Bell Pepper, finely chopped
1 Tbsp. / 15 mL Watkins Caribbean Spice Rub
1 Can (15 oz. / 420 g) Diced Tomatoes
1/2 teas. / 2.5 mL Freshly-Ground Watkins Sea Salt
1–2 Tbsp. (15–30 mL) Watkins Cumin
1 teas. / 5 mL Watkins Calypso Hot Pepper Sauce

To taste, Watkins Black Pepper
To taste, Freshly-Ground Watkins Sea Salt

Heat oil in large nonstick or cast-iron skillet over medium-high heat. Add onion and bell pepper. Sauté, stirring constantly, 5 to 8 minutes. Add spice rub. Drain tomatoes, pouring juice into large glass measure. Add enough boiling water to juice to make 2-1/2 cups / 625 mL. Add this liquid along with tomatoes, rice and bean blend, salt, cilantro and Calypso Sauce to skillet. Stir well. Cover, bring to a boil, reduce heat and simmer until liquid is all absorbed, about 15 to 20 minutes. Fluff with fork; add salt and pepper to taste. Pass additional Calypso Sauce as condiment.

Note: If you want to make it milder, decrease the amount of Caribbean Spice Rub and/or omit Calypso Sauce. Guests who want it authentically hot can simply add more Calypso Sauce at the table.
