
Microwave Peanut Brittle
1 1/2 Cup Unsalted Dry-Roasted Peanuts
1/2 Cup light Corn Syrup
1 Tbsp. Butter or Margarine
1 teas. Watkins Vanilla Nut Extract
1 Cup Granulated Sugar
1/8 teas. Salt
1 teas. Watkins Vanilla, Double Strength
1 teas. Baking Soda
In glass mixing bowl combine peanuts, sugar, corn syrup
and salt. Cook on HIGH (100% power) 7 to 9 minutes until mixture is bubbling and peanuts
are brown. Quickly stir in butter, Watkins
Vanilla, and Vanilla Nut Extract; cook on HIGH (100% power) 2 to 3 minutes
longer. Add baking soda; stir quickly just until mixture is foamy. Pour immediately onto
greased baking sheet, spreading to desired thinness. Let cool about 15 minutes until firm.
Break peanut brittle into pieces; store in airtight container. Makes about 1 1/2 pounds.
