Betty’s Best Zucchini Bread

Grapeseed Oil is heart healthy. It is the only oil known to raise good cholesterol and lower bad.

Order Watkins Products

3 Cups Flour
3 Eggs
1 teas. Baking Soda
1 Cup Sugar
1 teas. Watkins Baking Powder
1 Cup Watkins Original Grapeseed Oil
2 teas. Watkins Apple Bake Seasoning
1 teas. Watkins Cinnamon
1 teas. Watkins Vanilla, Double Strength
1/2 teas. Watkins Nutmeg
2 Cups Grated Zucchini (about 2 large)
1 teas. Salt

Preheat the oven to 350 F. Spray 2 loaf pans, each 8 1/2 x 4 1/2x 2 1/2 inches (or a Bundt Pan) with Watkins Cooking Spray. Sift together the flour, baking soda, baking powder, spices, and salt. In a large bowl, beat the eggs until foamy. Add the sugar, oil, Watkins Vanilla, and dry ingredients, a little at a time. The batter will be thick. Add the zucchini; the mixture will be gummy. Pour the batter into the prepared loaf pans (or Bundt cake pan) and bake for 1 hour. Check after 50 minutes. If a toothpick comes out clean, the bread is done. This "bread" has a nice, light texture and wonderful taste.
