
Avocado and Papaya Salad
1/2 Head of Boston lettuce, washed (with
Watkins
Fresh Wash) and dried
1/2 Bunch Watercress, washed and dried
2 Ripe Avocados
1 Tbsp. Fresh Lemon Juice
1 Ripe Papaya, peeled, seeded, and sliced
1/4 Cup Finely Chopped Pecans
1/2 Cup Watkins Original Grapeseed Oil
1 teas. Watkins Tarragon
Break lettuce and watercress by hand into bite-size
pieces and put into a glass salad bowl. Peel avocados, remove the pit and slice. Rub
slices with lemon juice and add to the bowl. (Instead of using lemon juice, I sprayed the
avocado slices with Watkins
Fresh Wash!) Add papaya slices and pecans.
Mix together grapeseed oil, tarragon and vinegar very well and pour over the salad,
tossing lightly. Serves 4.
